Smoked Rainbow/salmon with maple glaze (Indian Candy)

Cut your Rainbow trout or salmon into 2"x3" squares with skin on.
smoke as normal in smoker,with preferred chips,then brush on real maple syrup for a candy glaze. I use this recipe for Northern pike as well.

Dang he hunts, butchers, fishes, smokes fish and probably cooks great as well, if I lived close to you you sure would be a welcome member at my camp.
