Well yesterday I got it all down in a brine so today it's time to fire up the smoker and my new dehydrator lets hope it all turns out, I sent Dan a few pics of yesterdays prep hopefully he got then to post on here.

Well Dan you are up and at it early as usual, thanks and thanks for the short joke as well I am never going to hear the end of being short am I :Doh!:

First pic if you notice that is one old meat slicer and it was my Opa's and Oma's from the farm, they traded a cow for it back in the day, it sliced the roast great and they were still pretty much frozen.

Second pic is the salmon down in a dry brine.

Third pics is the Moose meat in a peppered brine & cure.

More pics today and if the jerky turns out might even bring some goose hunting to share with all the people under 6'
