Almost ran out of smoked cheese

I was getting low in the smoked cheese department so put together a new batch. Couldn't find a deal on Gouda but 4 kinds of cheddar, a Jarlsberg and costo Bergeron made the cut.

2 1/2 hours on the smoke with 50-50 apple/pecan wood. Vacuum sealed and in the fridge to rest for a month.

Get the crackers boys and girls. May 1st I'll be on the sun deck with a beverage and giving a couple of these a try.

We had seven Navy people with us Thursday until today......had a dozen packs of my October cheese left that went in the first day and a half! :Yikes!:

Smoked/ cooked a 10 pound ham, 5-6 pound prime rib, a few ribs too........BBQ'd rib steaks bigger than half the size of big dinner plates.....:WHAT?:..... they are heading home fatter and happier!!
