One 5-6 lb roast
1/4 cup olive oil or bacon strips (your preference on moisturizing during cooking)
Coat BBQ grill with olive oil, close lid and turn on to 450-500 degrees one side of grill burners only.

rub roast with oil all over than place on grill to sear all sides, for several minutes. Remove roast,salt/pepper and double tent wrap with foil, turn down heat to 300 degrees
and place roast to far side of grill away from direct heat.

cook for 45-60 min for med/rare every grill heat source is different and size of roast too. Check periodically. When done to your likeness, remove from heat and foil and let rest on plate 5-10 mins. If you want to pot roast this meal toss in your taters, carrots, onions etc with the roast in foil. Cut with the grain of meat and ready to serve and swallow.

I prefer to eat my game with only salt/pepper and no pork fat or spices at all(I enjoy the gamey taste)the recipes posted were made with spices so my wife would enjoy it more or anyone else that likes to cover up wild taste.
I don't make gravy for myself, but will for those who are eating with us.

W.G.
