Well since I didnt get any salmon so far this year... Gotta put the smoker to good use in other "ways"

Put a light rub on the spare ribs we picked up at costco in the states a few weeks ago. Froze the ribs when we came home and thawed them out to put the rub on yesterday afternoon. They looked kinda like this this morning when I fired up the smoker..

I cut the three racks into halves so that I could get them in the middle of the smoker racks. I found out that keeping the food in the centre of the racks in a bradley makes clean up much easier cause the drippings dont get all over the shelves where you put your racks. Here they go just before I closed the door for the smoke/bake.

I am planning on finishing them off briefly on the BBQ later to carmelize a little sauce on them.
