I'm looking for suggestions for a moose roast I have thawing in the fridge. I'll be roasting it tonight and was wondering if you all had any favorite rubs or seasoning for it.

I can always do what I always do but I'm looking for something different. So, what do you like?

It's 6 or 7 lbs and I was thinking I'd to it up in the dutch oven with some potatoes, carrots and onions tucked around it unless I get some good ideas to try here.
