This is a marinade I came up with because I got tired of seeing pineapple cleaned improperly .
I cut both ends of the fruit and remove only the outer husk , don't cut to far into the pineapple .
Next cut it in half and with flat side down cut three inch length wise slices, now trim the rough outer edge just enough so your left with clean fruit slices.
Now take the trimming and add to a blender , to this add 2 tablespoons hot pepper jelly, 1 cup orange juice, 1/2 teaspoon salt, 1/2 teaspoon coarse black pepper, juice and zest of 1 lime or lemon and my newest discovery , Tequila/Lime BBQ sauce , now place it in a freezer bag and add your fish, pork or game, I have used it with all three and its great not to mention I get to use more of the pineapple .
